Post ProdigySince calculations work and the issue appears only in the table visual, I would first verify the field's summarization and conditional formatting settings.
To rule out an extraction issue, you could test the same Salesforce field with Power BI Connector for Salesforce. It lets you select the required objects and fields and preview the data before importing it.
