Error interacting with REST API: Couldn't resolve host name

While the solution I mentioned did work I ended up setting up an ODBC connection the BigQuery. I then configured a connection with the same name on the gateway server. On the plus side it allows me to copy my BigQuery SQL to the Advanced section in the ODBC connection. The negative is that I'm unsure of how I'll share that connection with others - working through that at the moment.
The initial solution you asked for more detail on was using a Dataflow - by going to the shared workspace and adding a dataflow
Then navigating to Add new Tables:
Finally choosing the BigQuery Connector.

You need to install the SIMBA driver for the ODBC to BigQuery to work
Thanks for the details Sullyball2a . At closer inspection, the issue on my side seems to be purely related to VPN and proxy settings on devices managed by my organization, sadly : (
