Data snap shots for tracking

Using Salesforce data we do reporting on numbers of customer contacts (we call them cases) and what status they are in. So for example on a Sunday morning we might have a scenario like the image below. On Monday morning, I can only run a report showing what the data is, not what is was. I'd like someway of creating a table that dumps the position when I refresh that query at say 8am every morning so that I can show a chart of how things progressed throughout the week. 

Is that possible?
