All doesn't override filter CONTEXT

The logic of your [all trial] measure looks correct, assuming that your visual is grouping by 'Product'[Category] only.
Is there by any chance a sort-by column or group-by defined on 'Product'[Category]?
If you examine the DAX query generated by the visual using Performance Analyzer, it may help answer this.
In the SUMMARIZECOLUMNS portion of the query, if there are two columns inside ROLLUPGROUP, then that is the source of the problem, and the second column would need to be added to ALL.
SUMMARIZECOLUMNS(
ROLLUPADDISSUBTOTAL(
ROLLUPGROUP('Product'[Category], 'Product'[Some Other Column]), "IsGrandTotalRowTotal"
),
"all_trial", 'Sales'[all trial],
"v_all_trial_FormatString", IGNORE('Sales'[_all trial FormatString])
)
Otherwise, this is how I would expect the SUMMARIZECOLUMNS portion of the query to appear if no sort-by or group-by columns are defined:
SUMMARIZECOLUMNS(
ROLLUPADDISSUBTOTAL('Product'[Category], "IsGrandTotalRowTotal"),
"all_trial", 'Sales'[all trial],
"v_all_trial_FormatString", IGNORE('Sales'[_all trial FormatString])
)
If the above doesn't help, could you post a link to a PBIX demonstrating the issue?
